Black Rice Caprese Salad - 8 oz.

Ingredients:

Yield: 6 (1 c.) servings

  • 2 c. vegetable stock or water
  • 8 oz. InHarvest Nerone Black Rice
  • 1/3 c. olive oil
  • 2 2/3 T. balsamic vinegar
  • 5/8 T. dijon-style mustard 
  • 6 oz. mozzarella cheese, ½-inch dice
  • ½ c. sun-dried tomatoes, julienned
  • ½ c. basil leaves, roughly chopped
  • ½ c. roasted red peppers, diced

Directions:

  1. Bring the water or stock to a boil. Add InHarvest Nerone Italian Black Rice. Reduce to a simmer and cook, covered for 40 minutes. Cool completely.
  2. Whisk together the olive oil, balsamic vinegar and dijon mustard.
  3. Combine the cooled rice, dressing and all remaining ingredients.
