Black Pearl Medley® Jambalaya - 8 oz.

This Jambalaya has all the key elements of the traditional recipe – chicken, andouille, and heat – but cooks up in one pot, for easy prep. Black Pearl Medley® adds depth-of-flavor and texture with whole grain brown rice, black barley and Daikon radish seeds.

Yield: 6 1-cup servings

  • 2 c. chicken stock
  • 1 bay leaf
  • 8 oz. InHarvest Black Pearl Medley®
  • ½ lb. cooked diced chicken
  • ½ lb. sliced Andouille sausage
  • ½ c. medium-dice green bell pepper
  • 1 ½ c. diced tomatoes with juice
  • ¼ c. diced hot green chiles
  • 1 T. smoked paprika
  • 1 bunch scallions, sliced
  • 2 T. (or to taste) Tabasco®


  1. Bring chicken stock and bay leaves to a boil.
  2. Into an oven-proof pan, place the InHarvest Black Pearl Medley, chicken, Andouille sausage, bell pepper, diced tomatoes, diced green chiles, smoked paprika and Tabasco®.
  3. Add hot stock to the pan and stir well to combine.  Cover with parchment paper and foil and cook in a 350°F oven for 45 minutes or until liquid is absorbed and grains are tender.
  4. Stir in chopped scallion and serve.
