Black Pearl Medley® Jambalaya - 8 oz.
This Jambalaya has all the key elements of the traditional recipe – chicken, andouille, and heat – but cooks up in one pot, for easy prep. Black Pearl Medley® adds depth-of-flavor and texture with whole grain brown rice, black barley and Daikon radish seeds.

Yield: 6 1-cup servings
- 2 c. chicken stock
- 1 bay leaf
- 8 oz. InHarvest Black Pearl Medley®
- ½ lb. cooked diced chicken
- ½ lb. sliced Andouille sausage
- ½ c. medium-dice green bell pepper
- 1 ½ c. diced tomatoes with juice
- ¼ c. diced hot green chiles
- 1 T. smoked paprika
- 1 bunch scallions, sliced
- 2 T. (or to taste) Tabasco®
- Bring chicken stock and bay leaves to a boil.
- Into an oven-proof pan, place the InHarvest Black Pearl Medley, chicken, Andouille sausage, bell pepper, diced tomatoes, diced green chiles, smoked paprika and Tabasco®.
- Add hot stock to the pan and stir well to combine. Cover with parchment paper and foil and cook in a 350°F oven for 45 minutes or until liquid is absorbed and grains are tender.
- Stir in chopped scallion and serve.
