Wild Rice Salad with Spiced Pepitas, Cranberries & Apple-Cider Vinaigrette

Ingredients:

Yield: 12 servings

  • 1 lb. InHarvest Grade A or Grade A+ Wild Rice, prepared in chicken stock
  • chicken stock, as needed
  • ½ c. pine nuts, toasted
  • 1 bunch scallions
  • 2 carrots, julienned
  • 3 oz. apple cider vinegar
  • 3 oz. vegetable oil
  • 3 oz. sun-dried cranberries
  • 4 oz. spiced pepitas (pumpkin seeds), toasted in oil with salt, paprika and chili powder
  • salt and pepper, to taste
  • watercress, for garnish
     

Directions:

  1. Prepare InHarvest Wild Rice according to package directions using chicken stock instead of water. Cool rice.
  2. Once rice has cooled, add remaining ingredients
  3. Serve at room temperature or chilled.
