Ruby Wild and Black Forest Blend™ Curry Bowl - 8 oz.


Yield: 4 servings


  1. Cook InHarvest Ruby Wild Blend™ according to package directions.
  2. Hold hot for service.
  3. Heat half of the oil in a large pot, add onions, ginger and garlic. Sauté until onions are translucent.
  4. Add curry powder and half of the salt, stir to combine. 
  5. Add InHarvest Black Forest Blend™ and vegetable stock, bring to a boil, reduce heat and simmer covered for 30 minutes or until lentils are tender. To create more sauce, add water to desired consistency.
  6. Hold hot for service.
  7. Toss potatoes, carrots, onion remaining oil and remaining salt, lay out on sheet pan and roast in 350 degree oven for 25 minutes or until vegetables are tender.
  8. Combine roasted vegetables with peas and hold hot for service.
  9. To serve, place 1 c. Ruby Wild Blend in a bowl, top with ½ c. Black Forest Blend, 1 c. vegetables and sprinkle with cilantro.
