Curried Lentil Dumplings - 8 oz.

Ingredients:

Yield: 6 servings of 5 dumplings each

Ingredients

  • 1 qt. water, lightly salted
  • 8 oz. InHarvest French Green Lentils
  • 2 T. curry powder
  • ½ c. coconut milk
  • ⅛ c. grated ginger
  • 1 T. minced garlic
  • 1 t. kosher salt
  • ½ c. small-dice medium-firm tofu
  • ½ c. chopped cilantro
  • ½ c. thinly sliced scallion
  • 30 wonton wrappers

Directions:

  1. In a pot on the stovetop, bring the water to a boil. Stir in the lentils. Reduce the heat to simmer and cook, covered, for 15 to 20 minutes or until the lentils are tender.
  2. Spread the lentils out on a sheet pan to let cool.
  3. In a mixing bowl place the lentils with all remaining filling ingredients and mix well.
  4. To assemble dumplings, place 1 oz. of the filling in the center of each wonton wrapper. Fold the wrappers as potstickers for pan-frying or wontons for steaming.

  • ⅔ c. Sriracha sauce
  • ⅔ c. lemon juice
  • ⅛ t. kosher salt

Combine all ingredients well.
